When you already have all the ingredients, here is the instruction on how to cook Spanish rice. Use chicken soup instead of water if you are cooking Spanish rice. When it is done, put it aside and continue to cook the other ingredients. Take a large skillet and place the green peppers, onion and garlic until it is tender. Before it is done, add some tomatoes, salt, chili powder, pepper and rice. Keep all of them in the frying pan for a few minutes and serve it afterwards.

Second is an easy flour tortilla recipe. The ingredients that you will need are 2 cups of all purpose flour, 1 teaspoon baking powder, 1 teaspoon salt, 1/4 cup vegetable shortening or lard and 3/4 cup hot water.

Mix all the ingredients in a large bowl. You will have to make sure that you will distribute the shortening throughout the dough. When it is finished, a sticky mass of dough will be formed. When it is all blended, place the tortilla dough in a floured surface and knead for 5 minutes until it is no longer sticky. Divide the dough into eight equal portions and roll them to your hands to form balls. Leave them in a floured surface and let them rest for 20 minutes.

After that, heat a pan to medium heat. Roll each ball to a thin tortilla which is about 6 to 8 inches in diameter. Place them in the pan and cook each side until it is golden brown. Place them in a container and serve them.

Third easy Mexican recipe is a pinto bean recipe. You will need 1 pound dried pinto beans, 8 cups of water, 1 12-ounce can of Coca Cola, 1 14 1/2 ounce whole tomatoes, 1 chopped large onion, 4 slices of thick-sliced bacon, 1/2 cup barbecue sauce, 3 tablespoons of Chile powder, 2 tablespoons Worcestershire sauce, 4 fresh jalapenos, 4 garlic cloves, 1 tablespoon ground cumin, 1 teaspoon ground black pepper and 1 teaspoon salt.

Get a heavy stock pot or a Dutch oven and combine all the ingredients except for the salt and pepper. Place it on high amount of heat and bring it to a rapid boil. When it boils, reduce the heat and let it simmer. Cook it slowly and stir up the beans regularly to prevent it from sticking to the bottom of the pot. Add more water when the pot begins to dry. Add the pepper and salt during the last few minutes. Place it in a bowl and serve it warm.
